DESCRIPTION
Sodium Bisulfite occurs as white or yellow-white crystals or as a granular powder. It consists of sodium bisulfite (NaHSO3) and sodium metabisulfite (Na2S2O5) in varying proportions and, for all practical purposes, possesses properties of the true bisulfite. It is unstable in air. One-gram dissolves in 4 mL of water. It is slightly soluble in alcohol.
Function: Preservative.
REQUIREMENTS
Identification: A 1:10 aqueous solution gives positive tests for Sodium and for Sulfite.
Assay: Not less than 58.5% and not more than 67.4% of SO2.
Iron: Not more than 0.005%.
Lead: Not more than 2 mg/kg.
Selenium: Not more than 5 mg/kg.
