CHARACTERS
Appearance: White or almost white, crystalline powder or colourless crystals.
Solubility: Freely soluble in water, practically insoluble in ethanol (96 per cent).

D. To 1 mL of a 10 g/L solution of the substance to be examined in a test tube, add 5 mL of a 20 g/L solution of sodium periodate. Heat on a water-bath and collect the vapour on glass wool moistened with water and inserted in the opening of the test tube. After heating for 5 min, transfer the glass wool to a test tube containing 1 mL of a 15 g/L solution of chromotropic acid, sodium salt and 3 mL of sulfuric acid. Heat on a water-bath for 10 minutes. A violet-red colour is produced.
TESTS
Solution S: Dissolve 2.5 g in distilled water and dilute to 50 mL with the same solvent.
Appearance of solution: Solution S is clear and not more intensely coloured than reference solution6.
Specific optical rotation: + 14.0 to + 16.0 (dried substance).
Dissolve 2.50 g in dilute hydrochloric acid and dilute to 25.0 mL with the same acid.
Ninhydrin-positive substances: To pass the test.
Chlorides: Maximum 200 ppm.
Sulfates: Maximum 300 ppm.
Ammonium: To pass the test.
Iron: Maximum 10 ppm.
Loss on drying: Maximum 0.5 per cent, determined on 1.000 g by drying in an oven at 105C.

DESCRIPTION
L-Serine occurs as a white crystalline powder. It is soluble in water, but is insoluble in alcohol and in ether. It melts with decomposition at about 228C.
Function: Nutrient.
Identification: The infrared absorption spectrum of the sample exhibits relative maxima at the same wavelengths as those of a typical spectrum as shown in the section on Infrared Spectra, using the same test conditions as specified therein.
Assay: Not less than 98.5% and not more than 101.5% of C3H7NO3, calculated on the dried basis.
Lead: Not more than 5 mg/kg.
Loss on Drying: Not more than 0.3%.
Optical (Specific) Rotation: [α]D20° Between +13.6° and +16.0°, calculated on the dried basis; or [α]D25° Between +13° and +15.6°, calculated on the dried basis.
Residue on Ignition: Not more than 0.1%.
